Did you tune in to UP for this week's new episode of Bringing Up Bates? Michael made her famous blackberry cobbler for the last time before marrying Brandon Keilen and moving to Chicago. It was a bittersweet day for the Bates family.
For those who are eager to try this Bates delicacy, here's the recipe (video also below):
Michael Bates' Blackberry Cobbler
Ingredients:
1 stick butter
1 cup self-rising flour
1 cup milk
1 cup white sugar
1/2 teaspoon vanilla
Blackberries or other fruit*
Instructions:
- Preheat oven to 350 degrees. In the pan you will use to make the cobbler, place the stick of butter and put pan in hot oven so that butter melts. (The Bates family uses a cast iron skillet.)
- In a separate bowl, combine self-rising flour, milk, sugar, and vanilla. Mix well. Add the blackberries (or other fruit) to the batter.
- Pour batter into hot pan with melted butter. Bake at 350 degrees for 45-60 minutes.
*The Bates don't specify how much fruit to add, but we recommend 3-4 cups.

In the video Michaela states to use one of everything and that includes 1 teaspoon vanilla not one half teaspoon in these recipes I see here. Why is there a misprint as 1/2 teaspoon when she said use one of everything? She specifically said...one cup of butter 1 cup of flour 1 cup of milk 1 teaspoon vanilla...

YUM! Blackberries were on sale at ALDI so it was the perfect excuse to try this. I used regular flour and a heaping teaspoon of baking powder instead of self-rising flour. Paired it with vanilla ice-cream and it was a huge crowd pleaser :)
ReplyDeleteit was hard to tell how much blackberries were used cuz it looked like after they got more, they ended up eating that amount while the cobbler was baking. any thoughts on whether its a cup or 2 cups based on the above recipe? definitely want to try to make this!

Thanks Annie for mentioning that, because I rarely use self-rising flour. A lot of times I use gluten-free flour, mainly quinoa. But I now want to make it too, lol. Even though fresh blackberries aren't much available in this season. But the recipe is simple; I'm sure Carlin and Tori and the other daughters could do it all right. Loved when Carlin said "who's gonna make it after you leave?" and Michaela says "you".

DeleteThis is the recipe that the Bates family provided, and we know that it works. Feel free to cut down the vanilla, but 1/2 teaspoon won't make much different. :)

I'd like to use some other fruit. She said we could use whatever fruit we want. Black berries may not be in season. So glad to know about other fruit.

Do you stir the fruit into the batter, do you add sugar to the blackberries first? Also, if using canned fruit do you add the juice?

DeleteYes, you should stir the fruit into the batter. No need to add sugar to the berries beforehand, as the batter has sugar in it. This recipe definitely tastes best with fresh veggies, but if you do use canned fruit, no need to add the juice.
